You're counting calories that never make it into your body. The number printed on a bag of macadamia nuts or walnuts overstates what you actually absorb by about 25%, because of how a nut is digested. Its cell walls survive chewing, trap fat inside, and pass straight through you. Here's what the research actually found, nut by nut.

Where the missing calories go
Every calorie count on a nut package comes from a formula built in the late 1800s. The Atwater system assigns 9 calories per gram of fat, 4 per gram of protein and carbohydrate, and multiplies out. It's fast, it's cheap, and for most foods it's close enough.
It was never built for nuts. The Atwater math assumes your gut breaks down and absorbs nearly everything you eat. A nut doesn't cooperate. Fat inside a nut is stored in cells with rigid walls, and chewing only ruptures the cells on the surface of each piece. The ones in the middle stay sealed. They travel the length of your digestive tract intact and leave with their fat still locked inside.
Researchers have confirmed this the unglamorous way: by measuring what comes out. When David Baer and Janet Novotny at the USDA's Beltsville Human Nutrition Research Center ran controlled feeding trials, they found whole nut cells sitting in participants' stool, fat vacuoles still full. That excreted fat is calories the label counted and the body never got.
The numbers, nut by nut
These come from randomized, controlled human feeding studies. Participants ate measured amounts under supervision, and researchers measured the energy that actually stayed in the body.

Almonds (~25% fewer calories absorbed) have the widest measured gap of any nut studied (macadamias were not a part of the trial). A full quarter of their labeled calories don't get absorbed when eaten whole and raw. Roasting cracks some cells, closing the gap slightly.

Why macadamias are the interesting case
Macadamias are the fattiest common nut. They are roughly 75-80% fat by weight, more than almonds, walnuts, or cashews. Under the logic of every study above, that structure should trap the most fat and produce the widest gap between labeled and absorbed calories.
Here's the honest part: no one has run the whole-macadamia feeding trial yet. Almonds, walnuts, cashews, and pistachios have all been measured directly. Macadamias haven't, and any brand that tells you a precise "you only absorb X%" number for them is making it up.
What we do have is suggestive. A 2023 randomized trial on macadamia nuts and cardiometabolic risk noted that participants didn't gain the weight their macadamia intake should have caused, and the researchers attributed it to the nut's food matrix its high fat and fibre content — reducing the metabolizable energy actually available. A 2023 systematic review in Advances in Nutrition reached the same conclusion for tree nuts broadly: up to roughly a quarter of the calories in nuts may go unabsorbed, and macadamias are flagged as an understudied nut where the same mechanism almost certainly applies. Australia's Nuts for Life, summarizing the evidence, puts it plainly: the effect likely holds across all nuts, macadamias included, even though the direct study hasn't been done.
So the accurate statement is this: macadamias have the structure and fat content that produce the largest absorption gap in every nut that has been measured, but the specific macadamia trial is still missing. That's a more useful thing to know than a fake precise number.
What actually changes the number
The gap isn't fixed. How you eat the nut moves it, and the direction is counterintuitive if you've spent years being told processing is the enemy.
Grinding, chopping, and roasting all rupture more cells before the nut reaches your gut, which releases more fat and shrinks the calorie discount. Baer's almond work found the effect clearly: whole raw almonds gave up 25% of their labeled calories, but roasting dropped that to 19%, and chopping roasted almonds dropped it further to 17%. This is why almond butter and almond flour deliver more of their labeled calories than a handful of whole almonds — the cell walls are already broken, so almost nothing escapes.
The practical read: if you're eating nuts whole and raw, you're getting the deepest calorie discount. Butters, flours, and finely chopped nuts still carry the fat and nutrient profile you want, but the "phantom calorie" effect largely disappears.
What this means if you count calories
If you've been rationing nuts to fit a daily number, you've been overcounting. A 1 ounce serving of whole almonds you logged as 170 calories was closer to 129. Over a month of a daily handful, that's a meaningful gap between the math you did and the energy your body saw — and it runs in your favor.
It also reframes the tired advice that nuts are "calorie bombs" to eat sparingly. They're calorie-dense on paper, but the paper is wrong. The satiety they deliver — from fat, fibre, and protein that genuinely do get absorbed — comes at a real caloric cost lower than the label suggests. That's close to the opposite of how most people have been taught to treat them.
None of this is a license to eat unlimited nuts; the absorbed calories are still real calories. But the ones you're most worried about, in the fattiest nuts eaten whole, are partly fictional.
