Golden Trail Mix Cookies
¾ cup (185g) butter, room temp
½ cup sugar
¼ cup honey
1 cup sweet potato mash
1.5 cups flour
½ cup oats
¼ cup desiccated coconut
1 tsp baking soda
1 tsp salt
¼ cup sultanas
¼ cup white choc drops (optional)
2 packets HOM roasted macadamia nuts, roughly chopped
2 HOM Chocolate and Coconut bars, roughly chopped
Preheat oven to 170’c. Cream the butter, sugar and honey until light and pale. Then add the sweet potato and egg and mix well.
Combine all the dry ingredients.
Add the dry ingredients to the wet ingredients and mix. Lastly add the macadamia nuts, chopped bars, sultanas and white choc drops and mix well.
Spoon mounds onto a lined baking tray and press the cookie dough down slightly and bake for 15-17 minutes.
